Background:Â The Icelandic Pale ale is hop-forward with fruity tones. The flavor mainly comes from the simple two-malt and one-hop recipe rather than fermentation. The Icelandic character comes from the malt, which has just a bit of spice and intensity compared to your average American Pale Ale.Â

Ready to drink: 14â16 days (carbonation is up to your personal preference)

1 lb Dingemans Cara 45 malt (crushed)
Hops
1 oz Amarillo hop pellets, divided across 4 compartments
Yeast
1x US-05 dry yeast packet

𼣠Ingredient Preparation
1. Malt
Weigh 3 lbs Weyermann Pale Ale malt
Weigh 11 oz Dingemans Cara 45 malt
Mix both in a single bowl
Use the app/portal for precise water amount for pre-mixing
2. Hops
Prepare four hop bags using Amarillo pellets:
0.3 oz â Compartment 1
0.2 oz â Compartment 2
0.1 oz â Compartment 3
0.1 oz â Compartment 4
3. Yeast
Keep US-05 yeast ready
Add it after wort cools, when prompted by the app
đ§Ş Fermentation & Conditioning Schedule
đ§Ź Primary Fermentation
Keg lowers to 25°C, then add yeast
Attach:
Airlock to the center lid post
Trub container to the bottom of keg
Keg maintains 18°C for 2 days.
Gradually rises from 18°C to 25°C over 2 days
âď¸ Conditioning & Cold Crashing
đ Conditioning 1 (Day 5â6)
Temp: 25°C
Remove, empty & replace trub container
âď¸ Secondary (Days 7â13)
Slowly drop temp from 25°C to 12°C over 2 days
Hold at 12°C for 3 days
Then hold at 5°C for 2 more days
âď¸ Conditioning 2 (Day 14)
Temp: 5°C
Remove and empty trub container
𫧠Carbonation & Serving (Days 15â16)
Attach COâ cartridge to pressure regulator
Connect the black ball lock connector to the regulator
Mount the regulator to the keg post labeled CO2
Open regulator â wait 1 day.
Replace COâ cartridge â wait another day.
Connect the tap to the black ball lock connector, attach to keg post marked TAP
Gently release pressure using the overpressure valve
Set to 5 psi for the perfect pour
