Malt
Combine the following in one bowl:
1.6 Â lbs Viking Pilsner Malt + 1.6 Viking Pilsner Wheat
Follow the app/browser for the pre-mixing water amount.
Hops
- 0.2 oz Perle > compartment 1
- 0..2 oz Perle > compartment 2
Yeast
WB-06 Wheat Beer  (dry yeast)
Add only after the wort has cooled, as prompted by the app
đ§Ș Fermentation & Conditioning Schedule
đ§Ź Primary Fermentation (Days 1â4)
Add yeast to the keg
Attach the airlock to the center post of the keg lid
Attach the trub container to the bottom of the keg
Maintain 24°C for 4 days
đż Secondary Fermentation (Days 5â7)
Reduce the temperature to 12°C
Hold for 3 days (no dry hopping for this classic Hefeweizen)

Day 8 â Temp: 12°C
Remove, empty & replace trub container
Day 9 â Temp: 5°C
Remove, empty & replace trub container
Day 10 â Temp: 5°C
Remove, empty & replace trub container
Day 11 â Temp: 5°C
Remove, empty & replace trub container
đ«§ Carbonation & Serving (Days 12â15)
Attach the COâ cartridge to the pressure regulator
Connect the black ball lock connector to the regulator
Mount the regulator on the keg post labeled CO2
Open regulator â wait 1 day
Replace COâ cartridge â wait one more day
Connect the tap to keg post labeled TAP
Gently release internal pressure via the overpressure valve
Set to 5 psi for ideal serving flow
